Our Story
A Cheesy Story
Serving public and private events with mac and cheese comfort food since 2016.
It started with a Ragnar relay, a mac and cheese cup, and a recipe David couldn't shake. Today that same story shows up at your event as a hot, cheesy bowl and a team that answers the phone when you call.
Our Story
From a childhood kitchen to your event
Mac N Noodles started as a dream David carried since childhood, back when making mac and cheese with his siblings β even the powdered box kind β turned into a full evening event. He always wanted to open a restaurant, but banks weren't willing to finance a first-timer straight out of college. So he took the leaning that felt like a fallback at the time β a food truck β and spent months workshopping the perfect cheese sauce before rolling out with four fresh flavors on May 24th, 2016.
What sets us apart isn't just the cheese sauce, though guests always tell us how rich the flavor is. It's our communication β we're reachable by phone, text, or email, and we ask the questions upfront, like real guest counts, so nobody at your event goes without. We learned that lesson early, and we've carried it into every event since.
Today Mac N Noodles brings warm mac and cheese comfort food to schools, breweries, festivals, and weddings, built from ingredients you could find in any local grocery store β no preservatives, nothing fancy hidden in it. We still show up rain, snow, or shine, because a comfort-food setup for groups only works if it's dependable. Above all, we want to be known for how we talk to people, not just what we serve them.

How Service Works
From Truck Roll-Up To Full Bellies
Every event day starts the same way for us: show up early, confirm with our host, and get the cheese sauce simmering. We handle the setup, the cooking, and the serving so you can just enjoy the party.
One person takes orders while the rest of the team keeps every flavor stocked and ready, so the line moves and nobody stands around waiting on a bowl of warm mac and cheese. We don't stop serving until every guest in line is fed.
1
Arrival & Check-In
We roll up 30β60 minutes early and confirm parking with the host before setting up.
2
Setup & Cook-Off
Generator's running, sauces are simmering, and every flavor is prepped and ready to serve.
3
Order & Serve
One team member takes orders while the rest cook and plate, keeping the line moving fast.
4
Serve Till Done
No breaks until every guest is served, no matter how long the line runs.
5
Pack Up & Roll Out
Once the last bowl is served, we break down clean and head out.
We don't stop serving until everyone's had their bowl.
The Booking Team
Real Truck Experience, Ready To Help
Every person you talk to has actually worked the window and the grill, not just a phone line β over 7,000 events between them. Reach out by phone, text, or email and they'll help you figure out the right mac and cheese service for your guest count.
David
Senior Booking Agent
When a host needs cheesy bowls built for events at real scale, David leans on lessons from managing Chevron's crews at 1,500 meals a day for 30 straight days and keeping FedEx supplied at roughly 1,200 meals per weekend during Covid. Those stretches taught him to plan backups before they're needed, including the switch from truck to buffet service if equipment ever gives out mid-event, so warm mac and cheese comfort food keeps reaching the line. He also helped push through Colorado's statewide health and fire reciprocity bill, cutting the old jurisdiction-by-jurisdiction friction that once made mac and cheese catering harder to schedule across markets.
Brandon
Senior Booking Agent
Before Brandon was booking mac and cheese for events, he was cutting his teeth in 2003 at Red Robin and, two years later, Isle of Capri in Black Hawk, moving through front-of-house, expediting, and banquet setup on his way into food trucks and catering. Twelve years in β 6 of them hands-on with trucks, smokers, and live kitchens β he's helped bring warm, cheesy comfort food to groups like Amazon, Starbucks, the Denver Broncos, the Denver Nuggets, Southwest Airlines, Harvard, and Texas A&M, leaning on deep market knowledge across Denver, Fort Collins, Miami, Fort Lauderdale, Boston, and San Francisco to keep sauce-to-noodle ratios right and lines moving. Brandon's approach to a simple comfort-food setup for groups is to trim the menu, screen every team on service, reviews, food, and presentation, and stay ready to swap in help fast if standards slip.
Jess
Food Truck Booking Agent
Ask Jess what trips up most first-time hosts, and she'll say it's ordering off headcount alone β demographic mix, vendor meals, and service style all shape how much warm mac and cheese comfort food a crowd will actually go through. That mindset guided her work on a 5,000-guest Southwest Airlines event and a later 5-day stretch prepping 10 trucks for 50 events and roughly 7,500 guests, with every truck rolling out fully stocked on the correct menu. Jess also reviews insurance, safety compliance, references, and fire-risk gaps beforehand, which is how our team helps plan the right mac and cheese service for your guest count.
John
Food Truck Booking Agent
Before he ever built a booking calendar, John spent 6 years working food trucks directly and 2 more managing stores, which is why he still checks stable cheese sauce and steady holding temps as closely as he checks COIs and permits. Denver fire inspections and permit work gave him the operational eye he now applies from Los Angeles to Orlando, Miami, Sacramento, and Washington, DC, always weighing guest count, service speed, and setup style before locking in a mac and cheese setup for the day. That instinct paid off on the highway to Ontario, when a trailer's tow vehicle lost a radiator hose and John got the driver into a rented replacement, keeping warm bowls moving and arriving on time β the client rebooked him the following year.
Kaleb
Food Truck Booking Agent
A wheel bearing failure on the way to a booking didn't stop the show β Kaleb had a substitute mac and cheese truck coordinated in under 20 minutes, and the event went on without a hitch. That same steady planning let him move a 200-guest wedding from buffet to food truck service with just 30 minutes' notice, and it's why he won't help plan mac and cheese catering for your event until he's checked current fire extinguishers, valid health and fire licenses, and coolers that are labeled and organized. His approach to comfort food without overcomplicating the event: a legal truck, a clean setup, and a plan that already holds up before the first bowl is served.
Simon
Food Truck Booking Agent
Booking a truck through Simon means working with someone who has spent 3 years directing prep kitchens and 7 more running trucks day to day, a mix that's carried him through a decade of catering and thousands of events, including recurring Southwest Airlines dates near 1,200 employees and brand projects with Kroger, Amazon, and FedEx. When a fall festival ballooned from an expected 100 guests to nearly 300, he made a commissary run for extra inventory himself, keeping the line moving and the food quality steady. That same instinct for fire-safety readiness and lean, fast-moving menus is what he brings to matching Mac N Noodles trucks to your event's guest count.
Stephen
Food Truck Booking Agent
Long before he was matching hosts with the right truck, Stephen was elbow-deep in the work itself β cooking, driving, and serving across more than a dozen rigs, then stepping up to help run a 12-truck operation with corporate events topping 1,000 guests. His steadiest skill shows up in the pinch moments: rallying a crew to re-hitch a failed trailer and still rolling into service 50 minutes early, or turning a next-day request into a fully booked event within the hour. That same calm under pressure shapes his advice for mac and cheese catering that keeps the line moving β two entrΓ©es, kept simple, so the comfort food stays warm, cheesy, and easy for guests to enjoy.
Thomas
Food Truck Booking Agent
For warm mac and cheese comfort food to reach an event lineup, Thomas needs the paperwork solid first: COIs, permits, insurance minimums, and a track record that holds up against Denver Department of Public Health & Environment and Denver Fire Department standards. He's just as attentive to the details that make cheesy bowls work at scale, like stable cheese sauces that won't break in a warmer, and when a generator quit mid-event he traced it to a low-oil shutdown, topped it off, and had comfort food without overcomplicating the event back in guests' hands within minutes. His planning advice holds steady across every guest count: plan the service flow, not just the menu.
Zo
Senior Booking Agent
Zo built his standards from the ground up, spending about 16 years directly behind trucks, smokers, and kitchen lines before ever booking someone else's crew. That foundation now shapes a simple comfort-food setup for groups, with credentials to match: a culinary degree, ServSafe certification, and past work alongside Quest Diagnostics, Monster Energy Drink, St. Joseph Hospital, and NFL LA Chargers staff. Whether it's coordinating around Douglas County and Castle Rock fire expectations or the day he ran eight large holiday events with a minimal crew, Zo insists on prime meats and fresh prep so mac and cheese catering keeps the line moving.
